Today, I’d like to share with you the story behind “What kind of place is Uonobu Shokudo?”
The Roots of Uonobu Shokudo
The origin of Uonobu Shokudo lies in our parent restaurant “Ajino Shuukaijou Uonobu,” founded in 1967.
It started as a small 4-tsubo (about 14 square meters) fish shop in a local supermarket.
The founder was my grandmother, Nobuko, from whom the name “Uonobu” comes.
Uonobu is a traditional Japanese restaurant offering dishes centered on fish, kama-meshi (rice cooked in an iron pot), and tofu. It has long been loved for events like memorial services and celebrations.
However, on weekends it became fully booked with reservations, making it harder for people to casually drop by.
That’s why in 2019, we opened Uonobu Shokudo—a more casual place to enjoy Uonobu’s flavors.
Why Fried Shrimp?
Our signature dish is our fried shrimp.
Many ask, “Why fried shrimp?”—and the answer is simple.
Because my father, the second-generation owner, has loved fried shrimp since childhood.
But there were no places in our town where you could eat truly delicious fried shrimp.
So we decided—let’s make the best fried shrimp ourselves!
To do so, we’re particular about:
✅ Crispy, high-quality breadcrumbs from a specialist vendor
✅ Rice oil that’s light on the stomach
✅ Homemade tartar sauce
The Third-Generation Owner with a Seafood Allergy
Let me share a bit about myself.
I was born in 1998 and spent a lot of time at my grandmother’s house next to Uonobu.
But I have had a seafood allergy since childhood.
Even the smell of crab would trigger symptoms, and I was once hospitalized after accidentally tasting seafood broth.
My family told me I couldn’t take over the restaurant.
But my grandmother once told me:
“Destiny and fate are different. Some things can’t be changed, but if you try, you can shape your own destiny.”
That gave me the strength to train at a Japanese restaurant in Shiga after high school.
In 2019, I decided to open a restaurant that reflected my way of passing on Uonobu’s taste—
and that became Uonobu Shokudo, with fried shrimp as our flagship.
What We Aim for at Uonobu Shokudo
Uonobu Shokudo is:
“A casual eatery for families,”
but also,
“A place that offers truly crafted, delicious dishes.”
