It’s a simple recipe, but perfectly balanced and packed with flavor.

We use:

Eggs, onions, pickles, capers, parsley, mayonnaise, lemon juice, mustard, and salt & pepper.

This mix brings together richness, tang, and a refreshing finish—with a texture that keeps things exciting.

What makes the biggest impact? The pickles and capers, which add a touch of acidity that cuts through the oiliness of the fried food.

Lemon juice and mustard brighten up the flavor, keeping you wanting more with every bite.


 

Crafted by Chef Saito – A Veteran of 32 Years

The creator of our tartar sauce is Chef Saito, who has 32 years of culinary experience.

After graduating from a local high school and culinary school, he trained in French and Italian cuisine at hotels and specialty restaurants.

Four years ago, he chose Uonobu as his “final career destination,” and now supports both Uonobu Shokudo and our main restaurant.

His tartar sauce isn’t just a sauce—it’s the result of deep culinary skill:

the way ingredients are chopped, the timing of each mix, and the delicate balance of flavor—all carefully calculated to bring out the best in every fry.
