Today, I’d like to tell you about the special breadcrumbs we use at Uonobu Shokudo.

Since opening, we’ve been using breadcrumbs from Nakaya Breadcrumb Factory, a specialty maker—not mass-produced breadcrumbs. Why? Because we want to serve our fried shrimp in the best possible condition.

What is Nakaya Breadcrumb Factory?

Located in Shinagawa, Tokyo, Nakaya has been making breadcrumbs since 1955.

They supply about 900 restaurants across Japan, including tonkatsu shops, Western-style eateries, and butcher shops.

Remarkably, around 70% of Tokyo’s Michelin-listed tonkatsu restaurants use Nakaya’s breadcrumbs.

What sets Nakaya apart is that they bake bread specifically for breadcrumbs, ensuring tight quality control. Unlike commercial breadcrumbs, their custom-made variety is perfect for deep-fried dishes.

Nakaya uses only the white part of the bread and forms clean, crisp flakes (called kendetate in Japanese).

Thanks to this, our fried shrimp has a crispy exterior and a plump, juicy interior.
